I love to make bucket lists for summer. I usually find a cute bucket list off of Pinterest, print it out, and hang it up in the kitchen. My kids love to check activities off as we do them.
But sometimes it’s nice for Mom to have her own little bucket list. So, I put together a little baking bucket list for June.
None of these recipes are too crazy difficult. They go with the month. And they will all bring a little joy to the month.
- Homemade Cornbread Biscuits. This seems random, but I just made some really delicious White Chicken Chili in the slow cooker. And I had to have a side of cornbread to go with it. I always buy the box of cornbread mix at the grocery store, but how amazing would these biscuits be!! And you would have time, because the dinner is in the slow cooker…
- Citrus Olive Oil Muffins. These were intriguing to me because the citrus/ olive oil combo. I want to try that. Also, I love baking recipes that use olive oil instead of butter. No melting or softening- just pour. So, ya. I need to try these.
- Flaky Puff Pizza Crust. This one won recipe of the year award at King Arthur! My kids love all homemade pizza crust, so I know they will love this. I would love to be so good at pizza crust that I can easily whip it up, no problem. A yummy goal for me!
- Sheet Pan Chicken Sausage and Veggies. We have been eating this dinner almost weekly, lately. It is sooooo easy. Just chop up 3 different veggies, potatoes, and chicken sausage. Pop it in the oven, toss in the middle of baking, and it is Done! I put a little of the Japanese BBQ sauce on mine. It’s so good. And even better, because it’s easy. And even more better, because it’s budget friendly.
- Chipotle Salmon Bowls. We can not get enough of this recipe! The whole entire family. It’s my 4 year old’s favorite dinner. I serve this with the avocado/cucumber salad and jasmine rice. I also make the chipotle honey sauce to drizzle on top of everything. Including the sides, the sauce, and the main dish- it is one of the easiest and most impressive dinners I can make. 100 stars!
- Chicken enchiladas. I just find enchiladas a comfort food. And worth whatever effort it takes. I’m still trying to get one or two of the kids to love enchiladas… so this one is more for me.
- Sourdough Discard Blueberry Cobbler. This one uses sourdough discard, which I love. I know I’m not the only one who hates to get rid of the sourdough starter. So, love this recipe just for that. But to sweeten the deal, this recipe uses blueberries…fresh or frozen. Which, honestly, I’ll more than likely grab a bag of frozen blueberries at Costco. But, soon there will be some fresh blueberries available for u-pick near me! And I’ll have to get some fresh ones then.
I love having a little list of ideas to inspire me. I don’t know if I’ll get through all of these this June, but I love having some inspo. Let me know if you have a favorite June Baking Recipe you make.
