Quick and Easy Energy Balls

These have been around for a long time. I got really into them a few years ago, then forgot about them for a while.

And while I was at work recently, I saw them for sale in the cafe. There were 4 little balls for about $4! So of course, I went home and made them for myself and the kids. I love the idea of saving a bunch of money by making them at home.

And they are the perfect after school snack. Peanut butter, honey, chocolate chips, shredded coconut, chia seeds…. mix it up and done! The kids love them.

The recipe I use is from Ali at gimmesomeoven.

-1 cup of oats

-2/3 cup of shredded coconut

-1/2 cup peanut butter

-1/2 cup of flax seed

-1/2 semisweet chocolate chips

-1/3 cup of honey

-1 Tbsp chia seeds

-splash of vanilla

Mix everything up. Scoop with a little cookie dough scooper. Place on a plate, then into the freezer. Enjoy when you need a little energy!
